Just a note: The liability of having a interviewee cut themselves operating an instrument that they have not been signed off as competent is HUGE.  I think your company/labs legal team would say absolutely not.
It would be nice to assess their cutting and other skills ahead of time, but that is what the probationary period is for.  Don't be afraid to let an underperformer go during probation.
More than likely, a good personality fit is the most important, anyway.
