Ruzin's big-page paperback book Plant Microtechnique
...
is very good.

There is also an older, less expensive hardback from
Univ of Iowa
Press by Graeme Berlyn, who is now a Professor of
Forestry at Yale.
Go to
http://www.yale.edu/forestry/media/pollution.html
Berlyn's textbook provides a step-by-step approach to
intelligent staining of sections of parts of plants.
