"The best control is healthy skin with the connective tissue in place but a tonsil is also great for checking how well your lymph tissue is staining.  Tonsil should be cut thinner just like the lymph nodes so you should use the tonsil when staining lymph nodes.  Make sure the tonsil has connective tissue in it so you can see the eosin staining in the collagen, blood vessels, cytoplasm, and RBC's.  Another good tissue is cervix with the glands.  The glandular area gives you the nice hematoxylin staining and the muscle and collagen fibers give you a nice contrast on the eosin staining plus you can always get cervix. 

I would stay away from the appendix since there is usually a lot of necrosis and the placenta is a little to bloody so the eosin is always some what overwhelming for a good evaluation "
