That's exactly how I do it too.  The trick is pulling the chuck off of the freeze bar when there is still a liquid center and then placing the tissue in this "puddle".  I then add a little more OCT on top, put the chuck back onto the freeze bar and weigh this down with the heat extractor.  If I don't catch it before it freezes all the way, I simple score the OCT with a scalpel blade to help create a bond with the subsequently added  RT tissue.
